Debuts Fabio Viviani Oak & Ash Barbecue Experience
Clayton State University students are enjoying the newly renovated Bent Tree Market—located in the Laker Hall Residence Hall in Morrow, GA. Now redesigned with modern convenience, rotating culinary concepts and extended service hours that support today’s student lifestyle – especially for those first-year residential students seeking late‑night dining options just steps away from their dorms!
A key feature of the renovation is Elior’s rotating concept model, giving students access to fresh, chef‑inspired offerings throughout the year.
The newest addition, Oak & Ash, debuted on March 17th. As part of the chef‑driven Fabio Viviani Hospitality (FVH) portfolio, Oak & Ash brings a bold BBQ experience to campus with brisket, pulled pork, salads, walking tacos, nachos, baked beans, and more—each crafted with smoky flavors and scratch‑made sauces. Guests will also enjoy deep‑South favorites like collard greens, creamy coleslaw, smoked chicken, and other regional classics, adding fresh, vibrant BBQ energy to the dining scene.
“Complimentary tastings drew enthusiastic feedback from over 100 guests, and sales climbed 15% the day following the grand opening,” says Elior Collegiate Marketing Manager Nia Hanson, who supports Clayton University. And, for those who submitted the “Dish on Dining” survey received a gift of either a colorful cutlery set or orange cup.
Other students’ favorites will include additional FVH Pop-In concepts, keeping the menu mix fresh and student focused!
“Through this renovation and the introduction of rotating, chef‑driven concepts, Elior Collegiate continues to respond to student needs with convenient, modern, and high‑quality dining solutions designed to enhance life on campus,” adds Miss Hanson.
