Elior Collegiate Debuts Oak & Ash at Clayton State

Elior Collegiate is elevating the on‑campus dining experience at Clayton State University (Morrow, GA) with the newly renovated Bent Tree Market—now featuring the debut of the Oak & Ash BBQ concept on March 17th. Located in the Laker Hall Suites, the Bent Tree Market offers modern convenience and expanded hours to support today’s busy student lifestyles, especially first‑year students looking for late‑night dining options just steps from their dorms!

Part of the chef‑driven Fabio Viviani Hospitality (FVH) portfolio, Oak & Ash is a bold BBQ experience featuring a full lineup of BBQ‑inspired favorites including brisket, pulled pork, salads, walking tacos, nachos, baked beans, and more — all crafted with bold, smoky flavors and scratch-made sauces. Guests will also see deep‑South influences oll, such as collard greens, creamy coleslaw, smoked chicken, and additional regional classics – bringing bold new flavors to the campus dining scene! 

“Complimentary tastings drew enthusiastic feedback from over 100 guests, and sales climbed 15% the day following the grand opening,” says Elior Collegiate Marketing Manager Nia Hanson, who supports Clayton University. And, for those who submitted the “Dish on Dining” survey, received a gift of either a colorful cutlery set or orange cup.

A key feature of the renovation is Elior’s rotating concept model, including other FVH Pop-In concepts, giving students access to fresh, chef‑inspired offerings throughout the year. These brands offer easy purchasing through dining dollars, adding flexibility for students seeking dining variety. 

In addition to the rotating FVH concepts, students can choose from fresh grab‑and‑go meals, microwave‑ready entrées, parfaits, and fruit cups—making it easy to pick up what they need and enjoy it back in their dorms.
